But with these amazing homemade pancake recipes, you can skip the box and change this up! Don’t let that scare you though, these are all pretty easy and taste amazing
Here are some I love:
Best Ever Pancake Recipe
Source: Grace and Good Eats
I have an extremely picky little girl. I know, I know…
We all have picky kids but this little thing would rather not eat for DAYS if she has to settle for her food if that’s what it comes down to. I don’t know where she got this ambition from, but I’d like to borrow it
One thing she’s been the pickiest about for as long as I can remember? Breakfast
I mean, even when I was breastfeeding if it was the morning it was on her terms, the way she wanted it. She will say yes to pancakes every time and it’s lead me to getting pretty creative with lots of different pancake recipes up my sleeve
What I like the most about this recipe is the timelessness of them. There’s nothing super crazy or unique about them
This recipe just gives you homemade fluffy pancakes every time with no “couple pancake sacrifices” at the beginning. It outlines the right ingredients for the perfect consistency and batter and the right strategy to perfecting pancake flipping
These are thick and fluffy, with a hint of sweetness, but not too much so you can top them how you like. There are 7 simple ingredients, they are easy to throw together, and voila
The perfect pancake, every. Single. Time ?
Fluffy Pancakes

Do you guys eat pancakes, sausages, and eggs for dinner as often as I do?
I don’t know what it is about breakfast for dinner, but it’s so much better than breakfast for breakfast. Maybe it’s the combination of the warm and fluffy pancakes mixed with the healthy and filling protein?
Or maybe it’s just easier to make rather than a full on 3 course meal every night
In our house, we usually do a big breakfast on Sunday morning, and breakfast for dinner once during the weeknight for easy preparation and ultimate deliciousness
If you’re looking for a pancake so flippin’ fluffy that your fork and taste buds will be landing on a mid July cloud… then boy do I have the recipe for you
These are made without buttermilk, and still somehow fluffier than if they were made with it. When you overmix your batter, have stale baking powder, humid conditions, and you don’t let your batter rest, these all become factors for flat pancakes
The trick to these is sifting flour. Every time I’ve used this recipe my pancakes have turned out light, airy, and extremely fluffy and I’ve used this technique in other pancake recipes as well
I pancake my eyes off of these fluffy heaven cakes!
Apple Cinnamon Buttermilk
Source: Adventures of Mel
Ahhh fall is in the air, and so is this Michiganders obsession for everything having to do with the season. The leaves changing from a green to reds, oranges, and yellows, the brisk air, caramel apple cider, and cozy sweaters and scarves
The best part about fall? FALL FOOD, duh
Whether you’re headed to a tailgate this fall or cozying up to a cup of hot soup or a warm sandwich, fall food just hits different. I don’t know what it is, but I go on a crazy frenzy of cooking and baking in the fall
With breakfast loving mouths to feed, this scarf wearing, Starbucks carrying, fall decorations all over my house having mommy does not mess around
The perfect fall pancake is crucial in my house
The secret to the SCENTsational fluffy apple cinnamon pancake?
Applesauce instead of eggs
This really works you guys, and if anything I feel like using applesauce not only heightens the taste but the consistency of the batter too. I don’t know if you guys have ever had “Musselman’s chunky applesauce” or not… but it’s the sweetest and the absolute thickest applesauce I have ever come across, and it’s perfect in this recipe
My kids love applesauce on its own, and they genuinely know the difference between the boring and watery motts and this chunky kind. This recipe easy, delicious, and genuinely full of sweet and cinnamon flavors
You’re sure to FALL in love with these pancakes this cozy season!
Gingerbread
Source: Love From The Oven
Speaking of cozy sweaters, trips to the cider mills, and yummy fall food… what’s your cookie of choice during the brisk season?
And if you’re not from the cold, do you people eat like you are from Michigan during the fall season? I’ve always wondered that
I mean, trust me I hate Michigan 5-7 months (depending on the snow) out of the year, but without a change in the seasons not only would I be left bored, but my taste buds would too
I think one of my favorite flavors in September and October has to be gingerbread. It’s spicy while still sweet, and it’s rarely used in other seasons
This fluffy and spicy sweet gingerbread pancake recipe is just as easy to make as buttermilk pancakes and essentially use the same technique, only you get that unique gingerbread flavor
My favorite thing to do is to top these with whipped cream, and strawberry jam. Sometimes I’ll add chocolate chips for added ooey gooey satisfaction too
However and wherever you decide to celebrate fall this season, run run as fast as you can to the kitchen and whip up these gingerbread pancakes!
Greek Yogurt
Source: Yellow Bliss Road
Protein is essential for good health, as well as weight loss. It is vital to cell growth, building muscle, and repairing tissue
Once you head into your 30’s and 40’s like this momma, you need more protein to keep your skin healthy and to fight off illness
Greek yogurt is a great way to boost your protein levels while avoiding heavy foods like meats. You can have it for breakfast and add in nuts and fruits, or my second favorite trick in the book, using it as a substitute for sour cream on top of baked potatoes
I’m serious you guy, don’t knock it until you try it
The best and most delicious way to get your greek yogurt fix?
In greek yogurt fluffy pancakes like these. The best part about adding greek yogurt to your pancakes is it gives them the same tangy as buttermilk does, without having to use it
With only 8 ingredients, these are some of the healthiest, tastiest, and easiest pancakes in the book. Light, fluffy, and perfect for stacking, I apollo-gize for not giving you this greek yogurt recipe sooner!
Healthy Oatmeal Pancakes
Source: Lady and the Blog
Ahhh Oatmeal, I just can’t get enough of it!
Oatmeal is cheap, versatile, and just freaking tastes good, especially in the fall months here in Michigan. And the health benefits?
Too many to even keep track of! Oats are rich in carbs and fiber, but also higher in protein than almost any other grain. They are very high in many vitamins and minerals and aid in weight loss by helping you to feel full
It’s no wonder that the whole “overnight oat” craze took off and I was all about it
The best oatmeal to use in baking pancakes, desserts, and bread?
The maple and brown sugar kind. My husband and I can get down with it, our kids love it, it gives me the fall taste I love, and it’s amazing in recipes just like this one
These oatmeal pancakes are a delicious and fluffy way to incorporate more healthy oatmeal into your life. When I find a recipe like this… That IS healthy, and I mean so healthy that you can customize your stacks with blueberries, chocolate chips powdered sugar, etc, I go with it
I would highly recommend using Quaker instant oatmeal in the maple and brown sugar flavor because it’s so much sweeter than plain old boring regular oats
They have that sweet brown sugar taste which pairs perfectly with tangy pancake stacks and you’ll be flipping pancakes that are flipping amazing every morning!
Fluffiest Blueberry Pancakes
Source: Pinch of Yum
If you’ve been reading my posts for a while then you know I had an amazing childhood filled with fun, love, and blueberries!
I grew up near a blueberry farm… typical Michigander, huh
I also say “ope” when I run into someone or something but that’s beside the point ?
With that being said, I can’t mess around with blueberry recipes. My parents would be incredibly upset if I was posting subpar recipes and I couldn’t do that to the family name
These fluffiest blueberry pancakes get their name for a reason and exceed ALL pancake expectations. They are just the right amount of sweet and melt-in-your-mouth delicious and are bursting with blueberries
They can feed 2-3 people generously, and the fat stacks don’t compare to other pancake recipes
These pancakes, and I sh** you not, could legitimately be eaten plain… Like with no syrup, nothing
Make sure you love your pancakes THICK and ultimately fluffy if you’re going to dig into this berry special recipe!
High Protein Cottage Cheese
Source: Countryside Cravings
Okay I’ll admit it, for most my life I was scared of cottage cheese
I wish I could tell you I’m kidding, but I’m dead serious. Something about the texture, mixed with the name, mixed with the fact that one time in college our bread went bad and my roommate said “it smelled like cottage cheese” I just… I couldn’t get myself to try it
Fast forward and Meg from Hercules is replaying in my head while I’m eating cottage cheese with a spoon saying “people do crazy things when they’re in love”
My husband made me try cottage cheese, thank god. Because it’s good, it’s packed with protein, and it’s low carb
Something I didn’t realize cottage cheese would be absolutely amazing in? Pancakes. But it is
It makes pancakes way way thicker and gives them a bit of a tangy taste as well. With only 5 ingredients and a 10 minute preparation time, you’ll be hitting yourself in the face about not running into these sooner
You won’t even know the added protein is in there and your pancakes will be thick, airy, and tangy sweet
I’m so happy I tried cottage cheese, and even happier to have this stacktastic recipe!
Banana Bread Pancakes with Chocolate Chunks
Source: Elephantastic Vegan
Imagine one of the best pancake recipes. Maybe it’s healthy and vegan?
It definitely has some banana incorporated, with that yummy chocolate flavor combined. And the pancake consistency still has to be thick, fluffy, stackable, and airy without compromising the health portion. If you’re wondering if this exists… It does
If you have an allergy sensitive person in your life like my Nephew, this dairy-free and egg-free pancake recipe is the perfect “settlement”, if you even want to call it that
These vegan Banana Bread Pancakes with Chocolate Chunks are the perfect combination of moist banana bread and fluffy chocolately pancakes
Plus, these are of the ultimate healthiness. They are made without any refined sugar and she also uses unsweetened rice milk. If it sounds like these wouldn’t be delectable and delicious, you’re wrong
The banana adds a sweet flavor that balances out the rich chocolate and you honestly won’t even be able to tell the difference
Very a-peel-ing!
Toasted Coconut Macadamia
Source: Modern Honey
If you’ve been reading then you know I have an extremely picky three year old who only ever wants pancakes for breakfast, especially on the weekends when she isn’t attending her neighborhood (pre) preschool, and often times I have to even take it a step farther and add colors to the pancakes
Some people might fault me for giving in but hey, I’d rather avoid the fight and I like seeing my little one happy
The problem I have is often times in the summer pancakes feel heavy and too hearty for a warm and sunshiny morning. Does anybody else feel like this? The flavors can feel kind of, dark. If that makes sense
I needed to solve the problem, did some serious research, and it paid off
This is a summertime stackable sensation of a pancake recipe. They are light and fluffy buttermilk pancakes with toasted coconut and then topped with macadamia nuts, bananas, and a drizzle of homemade sweet coconut syrup. Need I say more?
The bananas and coconut paired with the macadamia nuts give such a tropical feel and flavor, and I’ll admit I often add a little sugar-free whipped topping too because why not?
If you’re looking for a uniquely warm and fluffy pancake recipe, these will make you nutty!
Oreo Pancakes
Source: Kirbie Cravings
If you’ve been following my posts for a while now, you know I don’t mess around with Oreo’s
I’ll try to give anything the Oreo flavor… from muffins to donuts to cakes to cheesecakes I really don’t care; if there’s a will, there’s an oreo
And my family doesn’t complain about it either because seriously, who doesn’t LOVE Oreos?
If you’re looking to go big or home, these oreo pancakes are exactly what you’d want them to be. Soft, airy, perfectly sweetened, and uniquely Oreo
These are Chocolate Cookies and Cream flavored pancakes that are stacked with layers of sweet cream to resemble Oreo cookies and then drizzled with whipped cream
We often have these for breakfast during the holidays because they are truly more indulgent than anything else. My husband says I can’t really even call them pancakes but they are shaped like pancakes, made like pancakes, and can be stacked to perfection so I disagree ?
The homemade cream inside is made from scratch and is absolutely to die for, but it’s not that difficult to make
If you’re a chocolate and oreo lover than welcome to the dark side of the pancake, or what I like to call the “flip side”
Lemon Mascarpone
Source: Chocolates & Chai
Anytime my husband and I are out to a fancy dinner, so like maybe once or twice a year…
I ask myself the same question every time
Mascarpone vs cream cheese: what’s the difference?
They look essentially identical, both have a faint weirdly cheesy taste, and they’re definitely both creamy
Are they the same thing? Are people out there trying to doop us into buying this expensive mascarpone that’s actually just cream cheese in a different tub?
Well, you know me. I need answers. So I did digging. Apparently, by law, American cream cheese has to contain at least 33% milk fat and no more than 55% moisture
Mascarpone is basically the Italian cream cheese
Now that we know mascarpone is just Italian cream cheese on fatty roids, it makes perfect sense that this recipe is a stacked creamy piece of heaven in the shape of pancakes
Fluffy to the extreme and thick as thieves combined with tangy and sweet lemon is what you get with this recipe. It’s perfect for brunch with your family or friends, or as an indulgent Sunday breakfast
Plus, it’ll force you to try Mascarpone, which this Italian mommy highly recommends you doing ASAP
Cake Batter Red Velvet
Source: Gimme Delicious
Does anyone just… Forget about the red velvet flavor sometimes?
I don’t know why, but I’ll go a year without making anything red velvet and then somebody will bring a red velvet dessert to an event I’m at and it will all come rushing back to me
I really love the red velvet flavor in desserts and treats, and how much my kids and husband do too
These red velvet pancakes will start your morning off light, airy, stacked and creamy too! These turn out royally red, so they would be the ultimate sweet and creamy pancake for Valentine’s day or Christmas
And the homemade cream cheese syrup? YUM!
Come join me on my velvet throne this valentine’s day!
Easy Rainbow Pancakes
Source: Fun Money Mom
My daughter sometimes annoys me. Yes, I said it
Of course, I love her with all my heart… but her pickiness and her attitude and her girliness is just, it’s nothing like the simplicity that raising my son was
I can’t convince her to do or try anything, some days she hates everything in her sight including me, and her spunky attitude can already genuinely hurt my feelings
Okay, she sounds a lottttt like someone I know (me) but STILL, come on!
Can’t you just be the sweet innocent little daughter I want you to be without the mom genes you are clearly getting? Something I have learned while being a mommy to my spunky little Casey?
Patience, and deception. Definitely deception
Often times I need to take a breath and let her do things on her own terms, even when that means we are 10 minutes late because she wants to take 25 minutes to put her shoes on
And deception because sometimes I just need to do some creative storytelling
For example, when my daughter was on her food strike a couple of months ago I told her these rainbow pancakes were touched by a unicorn who cast a nice spell on the fluffy pancakes
It worked, and I have no regrets
This is an awesomely easy recipe without compromising the fluff and stack factor with a rainbow twist All you need is some milk, eggs, pancake mix, and a little oil. Then you add some food coloring, and my favorite is the big pack of Watkins colors because it’s cheap and has no artificial dye whatsoever, and voila
I’ll admit, the unicorn has touched a lot more than these pancakes, but this recipe is her favorite to visit ?
Lemon Poppy Seed
Source: Choosing Chia
These poppy seed spelt pancakes are incredibly delicious, stack worthy, and absolutely perfect for a spring breakfast, mother’s day dessert, or sunshiney summer morning
My husband is a lover of poppy seeds, and I try to incorporate it whenever I can. He was the one to tell me he thought it would be a good idea to find a good poppy seed recipe and he was (hate to say it ever) right
It just so happened that spelt flour was used in this recipe, but you could incorporate it to any recipe calling for flour
If you’re a poppy lover you will want to get on this recipe ASAP!
Fluffy Chocolate Chip
Source: Marsha’s Baking Addiction
Let’s face it, there is no other stack more perfect than a fluffy chocolate chip stack. So I give you these
She uses baking soda AND baking powder for the ultimate fluff and then stuffs them full with ooey gooey chocolate chips. They’re made entirely from scratch, but they are SIMPLE, which is one of the best things about this recipe
You’ll be using this chocolate chip pancake recipe again and again!
