I am very picky, particular, and conscious about eating muffins myself because a lot of times I’d rather have a donut or different type of dessert. But when it comes to THESE blueberry muffins, I’m weak, and I’m ready for them anytime

Plus, they are freezer or fridge friendly. I have no idea how you would ever have any left over to freeze, but if you want to they will be fresh as ever when you pop them out of the freezer, I’ve done it for testing purposes

Is there anything better than a trip to the cider mill in the fall?
You know, dressing your little ones up in plaid, taking pictures by the apple tree’s or Michigan signs, fresh bakery treats, yummy apple cider, brisk hay rides, and picking pumpkins?
During the months of June to October, I can honestly say if you’re not a Michigander, well then I feel sorry for you. The other months… Definitely debatable
My favorite time to go to the cider mill is mid-September. It’s a little early sure, but the leaves have still changed from green to reds oranges and yellows, the temperatures are warmer and to be honest, the whole month of October is a sh** show of people and waiting in line at the cider mills here in Grand Rapids
The best part about a cider mill?
CINNAMON SUGAR DONUTS, DUH
I truly never thought anything would compare to them, I mean how can anything? And then I found these, and I donut know what I would do without this recipe in my life
Donut muffins are a super soft, homemade muffins that taste just like your classic cider mill donut rolled in cinnamon and sugar
What makes them so amazing is that they are in the shape of a decadent and buttery muffin. Yum. ultimate yum
I can make these all year round for my kids, and we have the taste of fall right in our sugary messy fingers whenever we want. These are a great Sunday breakfast or tailgating dessert

With some chocolate chip muffins, there aren’t enough chocolate chips, and I find myself only enjoying the top of the muffin and regretting my decision once I get into the middle. Not these

Lemon Poppy Seed

Lemon is just… It’s clean, it’s refreshing, and as long as the flavor isn’t overpowering (which is crucial for lemon desserts) it makes for a sweet and decadent treat
These are incredibly delicious, and absolutely perfect for a spring breakfast, mother’s day dessert, or sunshiney summer morning. This soft and decadent muffin base is just exploding with lemon flavor
All thanks to the recipe itself which includes lemon zest, lemon extract, and lemon juice. But it doesn’t stop there
Each fluffy center is stuffed with a silky smooth pocket of lemon curd, and the topping is a sweet drizzle of lemon glaze. I do need to be honest though. At first, I was nervous about making these
Like I said before as much as I do love lemon desserts when the flavor is overpowering it can be too much to handle for me
My husband is a lover of poppy seed, and he was the one to tell me that he believed the recipe would be balanced out by the poppy seed flavors. He was (hate to say it ever) right
The poppy does balance out the recipe perfectly and it makes for the perfect zesty seedy muffin with just the right amount of both flavors

I have experimented with these muffins quite a bit, and they are a staple in the morning for me now. I prepare them a week ahead of time, and usually, add blueberries or chocolate chips to them. But don’t worry, they are good enough without doing that
I grab a muffin, make a small smoothie and I’m off to work feeling refreshed and like I just had dessert for breakfast. These keep me on track and energized in the morning

Having kids has taught me so much about myself, and my husband. It has made me thankful for the parents I had, and the way I grew up, my marriage, and has made me feel blessed all around
Of course, I have the days where I’m stressed, overwhelmed, and feeling sorry for myself, but that’s to be expected in mommyhood. Because of my son, I now look at things differently and question them too
For example… The last time I found myself making a coffee cake it dawned on me. Why are they calling this coffee cake?
There’s no coffee in here! It turns out Coffee cake is just intended to be eaten with coffee. Coffee cakes are often single layered, flavored with either fruit or cinnamon have a more cake-like texture, or yeast, which results in a more bread-like texture
This explanation definitely makes sense with the recipe. If you like New York-style coffee cake with its thick layer of crumbs, then you’re going to adore these coffee cake muffins
They are essentially mini coffee cakes, except these sweet muffins are all about their amazing, decadent Cinnamon Crumb Topping

These are hands down the best banana muffins I have ever had, and I don’t just say that. These are not only packed with that sweet banana flavor but have a brown sugar streusel topping that is absolutely to die for
The streusel topping is so good I use it in a lot of other recipes, but it’s my favorite in this one. This is easy to make, the flavor is a-peel-ing, and you can easily freeze them
I tested it out, and they are just as good after being stored. These muffins are good hot or cold, any time of the day, and in any season

Starbucks Copycat Blueberry Muffins

I love to take that time and drive around. I usually will head out to the dirt roads about 15 minutes away from my house, listen to music, and lately, I listen to podcasts. Do you guys have a favorite podcast?
I was listening to one just the other day about Starbucks; their business tactics, strategies to keep customers and get new ones, and their background story overall
One of the business tactics mentioned that really stuck out to me was their strategy to get people to order food. Of course, you’re coming to Starbucks for coffee… So while you’re already there why not?
They train their customer service representatives and baristas to always ask “and would you like to add a blueberry muffin or breakfast sandwich with that coffee?” and then bam, all of a sudden you’re hungry
At least one time, if not more, they will get to you to say yes. And there you have it. Immediate increase in revenue just for asking the question
They sold me on the blueberry muffin a couple of months ago, and for several months after that, they had me paying the big Starbucks bucks for this muffin twice a week
If you haven’t had a Starbucks muffin… well let me explain them to you
They are hands down one of the best bakery muffins I have ever had. It’s a pretty large moist and sweet fun exploding with blueberries and topped with some sort of crunchy and sweet vanilla-ey streusel
This copycat recipe is everything if you’re trying to match this muffin. I can’t even taste a difference, and I consider myself quite the Starbucks blueberry muffin connoisseur at this point
I have never made muffins with sour cream or white vinegar, but it all melds wonderfully and I think that’s the secret to the texture and creamy sweetness of the Starbucks muffs
