My son is learning about Greek Mythology in school right now…
He’s only 8, so they are very appropriate versions, but I love watching him be intrigued about other cultures and stories about different religions
This past weekend we visited the Grand Rapids Museum. We were looking at a bunch of different sculptures of people, and my son goes “mom, what if Medusa did this to all of them?”
It was such a creative question but he was genuinely worried and we had to talk it out for a little while

If you know me then you know Mexican food has had a special place in my heart forever. I remember being in college and hitting up our favorite authentic Mexican restaurant every Friday night with my friends, and the pitchers of Margaritas were always an added bonus
It’s just so filling, colorful, and flavor packed. Plus, the price is always right and it’s extremely easy to order healthy so a night out doesn’t completely throw off my fitness goals
Now that I am a mom, I try my best to make things homemade when I can
I have a giant sombrero and when my kids get home from school or from practice I’ll be wearing it and they know tonight is going to be a Mexican night! My kids love that lol
I wanna taco about these Mexican Pinwheels because they are muy delicioso. These little guys taste as good as they look, and I love all of the colors

You can customize the add-ins however you please. Whenever I bring these to a potluck I do chicken and steak pinwheels and just separate them with a little sign letting people know which is which

I’ve been trying different pinwheel recipes every week and it’s going great!
Over the weekend when I am bored, okay, I wouldn’t call it bored I would call it the hour I get over the weekend when my daughter is napping and my husband does something with my son and I’m exhausted just sitting, but anyways…
I surf around Pinterest looking for what pinwheels I want to try during the week, and then on Sunday when I grocery shop I gather the ingredients in bulk so I can also make them for my husband and kids on Monday and Wednesday or Tuesday and Thursday
My kids and my husband are great critics, and we’ve been keeping track of the recipes we like best so after a couple of months we can start making those and move onto other recipes to try
I have to admit, I’ve made these on more than just one occasion and they are bacon us crazy!
My kids, my husband, and I all agreed in unison that these are just so good, restaurant like good. If you’re the kind of person that likes to add bacon to your bacon and are a ranch in a wrap fan you won’t be able to get enough of these!
They are extremely simple to make, full of baconey cheesy ranchy flavor, and look as good as they taste. While they aren’t the healthiest pinwheels on the list, they’re still packed with protein

Have you guys heard this quote? I just find it kind of funny because, well, I’m Italian, and I cannot keep calm ?
Everybody knows that Italian blood is just a little more red than others, and we more easily see red because of this too
I’m Italian Italian… like my dad’s parents are fresh off the boat to America. My dad was the only one out of his five other siblings to marry a non-Italian woman
My mom is as Irish as they come, and as you can imagine my grandma did not like this at all
He always told me a famous story about a young Italian man telling his mom he has found the one and that he wants to marry her and have his mother meet her
He says “just for fun I’m going to bring three girls over and I want you to have small talk with them and tell me which one you think I love”
The Italian mom ends up saying “the one on the right”
Then the young man excitedly says “you’re right! How did you know that?”
And she says “because I don’t like her”
Now, I won’t say this story holds true to my family, but I won’t say it doesn’t either, LOL
You can’t go wrong with Italian pinwheels, they’re amazing!
The spread and the meats just give it enough kick to give it a little spice while the cheese, lettuce, and cream cheese tone it down and add a little creaminess to it. I love how easy these are to make, seriously

For me, I always think of buffalo chicken. Buffalo Chicken wings, buffalo chicken tenders, buffalo chicken dip, and now these buffalo chicken tortilla pinwheels!
I’ve been doing my best to make food homemade when my family and I or my husband and his friends are watching the game
Hosting people is something I truly like and I think there’s something about making food for a group of people vs. just going out and quickly grabbing something
I actually prefer these to wings or tenders because they are easier to make, healthier, and just flat out yum!

Now that we’ve all seen it, I’m not a crazy person anymore. Isn’t it so cute?
My husband loves roast beef, and I have recently found quite a liking for it too. The only time I had roast beef before meeting him was when my dad would bring home a Roast Beef and Cheddar from Arby’s
Remember when that was like the only thing on the menu? Or so everyone thought. I wasn’t very fond of that sandwich, but I wasn’t much of a complainer because the curly fries made it worth it
It wasn’t until I moved in with my husband that I tried deli roast beef and it’s actually quite good
He likes roast beef sandwiches in his lunch so I wanted to make sure I found a recipe that would not disappoint
Let me just say, he tells me he’d eat this “any day of the week” so if you or a loved one is a lover of roast beef, you won’t want to bypass this recipe

I grew up with every Tuesday being a taco day and I can still remember it vividly

Being Italian and all we often times had spaghetti for dinner, and we would sprinkle parmesan cheese on top
My parents called parmesan cheese “stinky cheese” and we would be at the table asking to “pass the stinky cheese”
Fast forward to 7 years old and I’m at a friends house eating dinner over there for the first time
We ordered Hungry Howie’s pizza and they had parmesan cheese sitting on their table
I asked her dad to “pass the stinky cheese” and the entire family broke out in laughter. I was so confused and slightly embarrassed
The I kind of wish my parents would have ya know, explained that it isn’t the real name of the cheese. My kids call it stinky cheese too but don’t worry I have PTSD and I make sure they know the true name

Loaded with fresh spinach, artichoke, and lots of cheese and then baked inside a crispy pastry like a cinnamon roll, my goodness these are absolutely spintastic!
These only take about a half hour to make and will hold well refrigerated for days so you can just pop them into the microwave. Just like the dip and chips, this is the perfect appetizer, and our family has put them on the side with meat as well because my kids love them

Monte Cristo Pinwheels

Growing up in my house, Thanksgiving was all about relaxation, tv, and immediate family
